KAJU KATRI
INGREDIENTS:
  • 300 gm Chopped cashew nuts.
  • 200 gm Powdered sugar.
  • ½ tsp Saffron.
  • 1 tsp Ghee.
  • Almond essence.
 
METHOD:
  • Soak cashew nuts in water for 2 to 3 hours.
  • Drain all the water out.
  • Smash it properly into a smooth paste.
  • Invert this paste in a vessel & add sugar to it & mix well.
  • Now add ghee to it & start cooking it on low flame.
  • Stir till it binds up completely & starts leaving the vessel.
  • When done add saffron & cardamom powder.
  • Remove from heat & invert it between two greased plastic bags.
  • Press from above and make it as thin as you want.
  • When cool cut it into pieces.
